
This is a great seasonal salad with nectarines, avocado, shaved radish, shaved fennel, goat cheese, toasted walnuts and an apple cider vinaigrette.

Ingredients:
Mixed greens
Avocado, sliced
Radish, shaved on mandoline
Fresh fennel, shaved on mandoline
Nectarine, sliced
Goat cheese, crumbled
Walnuts, raw or toasted
Dressing ingredients:
1 tbsp of dijon mustard
1/4 cup of apple cider vinegar
1 tbsp of lemon juice
1/3-1/2 cup of olive oil, depending on preference
1 tbsp of honey
salt and pepper to taste
Assemble salad on large plate. Start by adding mixed greens as your base layer. Alternate toppings so there will be a good mix of ingredients when served. To make the salad dressing add all of the ingredients (dijon mustard, cider vinegar, lemon juice, olive oil, honey, salt and pepper) in a jar with a tight-fitting lid and shake until well blended. Pour the dressing over the salad and serve.
