This is our kind of happy hour. Apple & brie puff pastry, coconut, dark chocolate & almond date bars and fresh figs with prosciutto.
Recipe: Apple & Brie Puff Pastry
Ingredients:
1 sheet of puff pastry, thawed and cut into 9 squares
1 small wedge of brie, cut into strips
1 apple, washed and sliced
3 tbs apricot jam
1 egg, beaten
Directions:
Preheat oven to 400 degrees. Lightly grease muffin pan or line a baking sheet with parchment paper. Assemble the puff pastry by laying a few slices of apple in the center of each square. Add a few strips of brie on top of the apple and spread a small spoonful of apricot jam on top of that. Close the puff pastry in your desired design, just make sure it secured or the fillings will spill out. Brush the puff pastry with the egg wash and bake for 15 minutes or until golden brown and the cheese has melted. Let cool for 5-10 minutes and serve.
